Christmas Cupcake Recipe

A simple, easy to follow recipe for making Christmas cupcakes just in time for the big day! 

For the cakes:                                               
-280g self-raising flour                                                
-175g caster sugar                                                       
-175g unsalted butter, soft
-150g fat free natural yoghurt
-1 tsp vanilla extract
-3 eggs

For the frosting:
-85g unsalted butter, soft
-1 tsp vanilla extract
-200g icing sugar, sifted

To decorate:
-natural green food colouring 
-sweets, sprinkles, sugar stars
-white and milk chocolate buttons
-icing pens 


1) Pre-heat your oven to 190C/170 fan/gas 5 and line a cupcake tin with festive cake cases
2) Place all the ingredients for the cakes into a bowl and whisk until smooth
3) Spoon the mixture into the cake cases and bake them in the oven for around 20 minutes, until golden and a skewer comes out clean from the middle of all the cakes
4) Cool on a wire rack
5) Beat the butter, vanilla extract and icing sugar until pale, creamy and smooth. To decorate the snowman, reindeer and puddings, first layer the cakes with white frosting and use the decorations like below!
6) When making the icing for the christmas tree cupcakes, mix green food colouring with the frosting and decorate with stars and sprinkles

      (Mine rose a bit too much, if this happens just slice off the top to make a flat base for decorating)
